Downeast Maine Pumpkin Bread
Ingredients- 1 (15 ounce) can pumpkin puree
- 4 eggs
- 1 cup vegetable oil
- 2/3 cup water
- 3 cups white sugar
- 3 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground ginger
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 7x3 inch loaf pans.
- In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.
- Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean
This recipe says it makes three pans but, I have only ever gotten 2 good sized loafs out of it. It really is a delicious combination of spices and pumpkin flavor. It's also super moist and the crust tastes delicious even if it does get a tad too crisp. A big hit in our house especially warmed up and served with butter melting on top. Warning: I never said it was healthy!!

ReplyDeleteIt's gotta be healthy! I mean, you can cover it with icecream and chocolate sauce and it still has a Vitamin A-Packed veggie in there somewhere! If it grows out of the ground, it is healthy in my book! Well, maybe not pot. They say that isn't healthy. And I would like to believe that brussel sprouts are not healthy either. So there are some exceptions to the rule. But buttery, icecream and chocolate covered pumpkin bread...totally healthy! I think all the food groups are in there since the eggs can count as the meat group. Which makes me wonder now...why are chicken embryos dairy but adults are meat? And don't tell me that it is because there isn't actually an embryo in there because I have had many-an-egg with that little red circle in the yolk and we all knows what that means...mama chic got her groove on!!!

ReplyDeleteNo WAY! I was just looking for a new pumpkin bread recipe - I seriously was! I have one I've used for a few years, but it seems to cook unevenly (and I don't think it's my oven because all my other breads turn out fine). I always try to add a little whole wheat flour, (part enriched, part whole wheat), so I wonder if that's what's messing it up. I hate using only white flour - but man, it tastes so much better! Thanks for the recipe. It's certainly pumpkin bread weather! :-)
